Givaudan and Fiberstar team up to expand access of versatile citrus fiber

Givaudan and US-based Fiberstar have entered an agreement to further commercialize FIberstar's citrus fiber ingredient, Citri-Fi, which can be used to replace a number of common texturizing ingredients in food applications.

Derived from soluble and insoluble lemon and orange fibers sourced from byproducts of the juicing industry, Fiberstar's non-GMO Citri-Fi ingredient can be used to improve texture, taste, and stability in a variety of products from baked goods to meat alternatives.

According to Fiberstar, Citri-Fi can add body and mouthfeel to dairy and dairy substitutes; improve viscosity and mouthfeel in soups and sauces; enhance moisture and freshness in bakery goods; and boost the juiciness and texture in plant-based meat alternatives. 

In addition to serving its current customer-base in the US, the partnership will expand access to Fiberstar Citri-Fi to new markets with an initial rollout in Latin America and to select customers in Europe, according to Givaudan, which intends to offer Citri-Fi as an ingredient across all global markets eventually.

Fiberstar Citri-Fi will be a critical addition to Givaudan's texture ingredients portfolio, commented Serge Sabrier, global category director sense, Givaudan.
