Dietary fiber modified for frozen functionality

The frozen food market is the latest target for a dietary fiber ingredient that its manufacturer claims can help maintain healthy cholesterol levels.

AHD International, which distributes new-to-market functional products for food and beverage formulations, says that a new grade of its LuraLean formula has been specifically adapted for use in frozen products.

The company claims that the product has been designed to retain its functionality even after flash freezing, meaning it can be included in a wealth of goods such as pizza, sandwiches, cakes, desserts and even breakfast goods.

Group president John Alkire said that the newly developed grade of LuraLean was provided in a fine mesh powder, a development he claims can provide a smooth texture that is also freeze, pH, salt and sugar-stable.
